Keep single sessions available at a higher per-session rate so the package is obviously the better deal.
How do I invoice a package without losing track of sessions used?
Put the session count on the invoice - "10-session package, sessions 1-10, expires 31 Dec" - so both of you are working from the same record. When you sell the next block, the previous invoice is your proof of what was delivered.
What is a fair no-show policy for personal training?
